Made this over the weekend because it was cold and I wanted something sweet, kind of “desserty” and warm. Nailed it! It turned out great and satisfied my need for some comfort food without leaving me feeling guilty, or lethargic afterward. Who knew “comfort” food could be healthy for you?
You’re going to start things off by coring the apple(s) and then slicing into small chunks. Then you’ll take a handful of walnuts and place them into a plastic bag, cover the bag with a dish towel then proceed to hammer them into small bits. I have a meat tenderizer mallet that I use for this purpose. That’s pretty much the most work you’ll put into this quick dish. Once the apple and walnuts are prepped, just put about a tablespoon of Ghee into a skillet and let it melt. Then dump in the apples, walnuts and let them get fully coated in the Ghee. Once coated, you can dump in the rest of the ingredients, saving the Cider for last. Let the whole thing cook until most of the cider has evaporated and you’re done!
- 1 apple, cored, sliced into chunks

- 1 tbsp cinnamon (more or less depending on the size of the apple
- 1 tsp nutmeg (more or less depending on the size of the apple)
- 1 handful of walnuts
- 1.5 tsp mexican vanilla extract
- Crispin Hard Cider Honey Crisp
