Had some peppers that were going to go bad soon and needed to figure out what to do with them.a One of the things I love about this new journey is is teaching me how to make use of everything and minimize waste. As a good friend recently told me,

When you learn to tackle the drawer of good intentions and make use of it…you become a total #badass. The drawer of good intentions is that vegetable drawer that goes to waste. Our grandmas were superior at this and I feel like we have so much to learn from them still with their gardens and making use of it everyday.

Thank you Leah Segedie! Challenge accepted.
So, I took some meat I’d already prepared for some Asian lettuce wraps, sliced the peppers in half and had stuffed peppers! Super quick and easy to make. Boys loved ’em!
